Hulk Pancakes

Makes: Approximately 8–10 pancakes

Preparation time: 10 minutes

Cooking time: 10–15 minutes

Ingredients

  • 100g self-raising flour
  • 1 teaspoon baking powder
  • 1 ripe banana
  • A large handful of fresh spinach
  • 1 egg
  • 100ml milk
  • A little sunflower oil for cooking

Method

  1. Place the banana, spinach, egg and milk into a blender and blend until smooth.
  2. Add the flour and baking powder, then blend again until the batter is smooth.
  3. Heat a lightly oiled non-stick frying pan over a medium heat.
  4. Spoon small amounts of batter into the pan and cook until bubbles appear on the surface.
  5. Flip each pancake and cook for a further 1–2 minutes until golden and cooked through.
  6. Repeat until all the batter has been used.

  • Frozen spinach works just as well as fresh, just remember to squeeze out any excess water.
  • Freeze leftover pancakes between sheets of baking paper for an easy breakfast another day.
  • Top with fresh fruit, yoghurt or a drizzle of honey (for children over 12 months) for added flavour.
  • Try adding different fruits as toppings to keep breakfasts varied throughout the week.
