A healthy snack alternative! These carrot cake cookies can be made from most things in your kitchen.
Carrots are rich in antioxidants, fibre, and essential nutrients that help support eye health, heart health, digestion, immunity, skin, and weight management while helping regulate blood sugar and reduce disease risk.

Ingredients
- 140g icing sugar
- Juice of 1 orange
- 350g wholemeal plain flour
- 1/2 teaspoon baking powder
- 1 teaspoon mixed spice & cinnamon
- 150g butter, softened
- 150g light brown sugar
- 1 egg, beaten
- 200g grated carrot
How to make your carrot cake cookies
- Heat the oven to fan 180C.
- In a large bowl combine flour, baking powder and spices.
- In a separate bowl beat together sugar and butter until creamy. Beat in egg and carrot.
- Add to dry ingredients and mix together.
- Form into 12 ball shaped cookies, flatten slightly and place apart on lined baking tray.
- Bake for 15 mins. Mix together icing sugar and orange juice. Drizzle over cooled cookies.
