Eat A Rainbow Challenge

This March, the ‘Eat A Rainbow Challenge‘ encourages us to add more colour to our plate. From red peppers to purple aubergines. See if you can eat/drink each colour group.

Many of us struggle to incorporate all the wonderful vibrant fruit and veg our planet has to offer us. Because of this we miss all the unique health benefits they provide us. By eating a range of colourful foods we can help boost our overall health.

Over the course of the month we will be providing simple recipes that don’t break the bank along with other resources. To kick start the challenge, here is a delicious red tomato and lentil soup .

Follow along and post your meals to your socials, tag us with #EatARainbowChallenge!, to help influence others. This is a great challenge to do with families and especially kids. Have fun and get creative!

Why are colourful fruit and vegetables so great? Each colour group has it’s own benefits, for example Red foods support heart health, lowers cholesterol and protects the skin. Yellow helps boost immunity and supports our eyesight.
