This No-Oven Fish Pie is a simple, comforting meal that’s packed with goodness and can be made entirely on the hob, making it ideal for busy days or homes without access to an oven.

No-Oven Fish Pie

Serves: 4

Cooking time: Approximately 25 minutes

Ingredients

  • 250g washed spinach
  • 600g potatoes, peeled and diced
  • 600g skinless fish fillet, cut into chunks (fresh or fully defrosted from frozen)
  • 1 tablespoon cornflour
  • 200ml milk (for the white sauce)
  • 50ml milk (for the mashed potato)
  • 1 tablespoon butter (for the mashed potato)
  • 1 tablespoon butter (for the white sauce)
  • Salt and black pepper, to taste

Method

  1. Bring a pan of water to the boil and cook the potatoes until soft. Drain well, then mash with 50ml milk and 1 tablespoon of butter. Season with a little salt and pepper.
  2. While the potatoes are cooking, gently cook the spinach in a large saucepan until wilted. Drain away any excess liquid.
  3. Add the fish to the pan with the spinach and cook gently until the fish is just cooked through.
  4. In a separate pan, melt 1 tablespoon of butter. Stir in the cornflour to form a smooth paste, then gradually whisk in the 200ml milk to make a creamy white sauce.
  5. Pour the white sauce over the fish and spinach, stirring gently to coat the fish without breaking it up too much. Season with black pepper to taste.
  6. Spoon the creamy fish mixture into serving bowls and top with the mashed potato, or serve the mash alongside if preferred. Enjoy straight from the hob—no oven required.
