Juicy Pork & Apple Burgers with Crunchy Apple Slaw

Ingredients

For the burgers

  • 500g pork mince
  • 1 eating apple, grated
  • 1 small onion, finely diced
  • 1 garlic clove, crushed
  • 1 tsp dried sage (or 1 tbsp fresh sage, finely chopped)
  • 1 tbsp wholegrain mustard
  • 50g breadcrumbs
  • Salt and black pepper
  • 1 tbsp vegetable oil

For the apple slaw

  • ¼ white cabbage, finely shredded
  • 1 carrot, grated
  • ½ eating apple, cut into thin matchsticks
  • 2 tbsp natural yoghurt
  • 1 tsp Dijon mustard
  • 1 tsp cider vinegar
  • Salt and pepper

To serve

  • 4 burger buns
  • Lettuce leaves
  • Tomato slices
  • Extra apple slices (optional)

Method

  1. In a large bowl, combine the pork mince, grated apple, onion, garlic, sage, mustard and breadcrumbs. Season well and mix until everything is evenly combined.
  2. Divide the mixture into four equal portions and shape into burger patties around 2cm thick. Chill in the fridge for 20 minutes to help them hold their shape.
  3. Meanwhile, prepare the slaw by mixing the yoghurt, mustard and cider vinegar together before stirring through the cabbage, carrot and apple. Season to taste and refrigerate until needed.
  4. Heat the oil in a frying pan or cook the burgers on a barbecue over a medium heat. Cook for around 5–6 minutes on each side, ensuring the burgers are cooked through with no pink remaining in the centre.
  5. Lightly toast the burger buns before assembling with lettuce, tomato, the pork burger and a generous spoonful of apple slaw.

Top Tip

Try adding a slice of mature Cheddar during the final minute of cooking, or swap the burger bun for a wholemeal roll to boost the fibre content.
