Couscous is a great store cupboard ingredient because it’s quick to prepare, budget-friendly and easy to customise with whatever vegetables you have at home. It’s also a fantastic recipe for reducing food waste by using up leftover vegetables lurking in the fridge.

Simple Vegetable Couscous
Serves: 4

Ingredients
- 200g couscous
- 200ml vegetable stock
- 1 tablespoon olive oil
- 1 red pepper, diced
- 1 courgette, diced
- 1 carrot, grated
- 4 spring onions, sliced
- A handful of cherry tomatoes, halved
- Fresh parsley, chopped
- Black pepper to season
Method
- Place the couscous into a large bowl and pour over the hot vegetable stock. Cover and leave for around 5 minutes until the liquid has been absorbed.
- Fluff the couscous with a fork and stir through the olive oil.
- Prepare the vegetables and gently mix them through the couscous.
- Finish with chopped parsley and a little black pepper before serving.
Top Tips
- Add chickpeas, beans or grilled chicken for extra protein to make this a more filling meal.
- Swap in whatever vegetables you have available, such as cucumber, sweetcorn, spinach or roasted vegetables.
- Make a larger batch and enjoy leftovers for lunch the next day.
- Fresh herbs, a squeeze of lemon juice or a sprinkle of feta cheese can add extra flavour if you have them to hand.
