Say ‘Hello!’ to yellow, with this pineapple dessert🍍
Use fresh or tinned, you decide. Pineapple is rich in vitamin C, antioxidants, and bromelain, which boost immunity, aid digestion, reduce inflammation, and supports heart and skin health. Ingredients
- 1 large tin of pineapple rings or chunks
- 1 teaspoon of cinnamon
- 2 tablespoons of honey
- Vanilla ice-cream
- Sprigs of mint (optional)
How to make your poached pineapple
1. Drain the pineapple and put the juice aside.
2. Add the chunks or rings to a pan with two tablespoons of pineapple juice or water.
3. Add the cinnamon and honey.
4. Mix and simmer on a medium heat for 5-10 minutes.
Serve with ice-cream and a sprig of mint (if using).
Hints/tips
Use tinned peaches as alternative.
Use half a teaspoon of powdered
ginger or half an inch of grated fresh
ginger for an extra kick.
Can be kept in the fridge once
cooled and added to breakfast
porridge as a topping.
