Nothing says spring quite like a bowl of homemade leek and potato soup. Made with just a handful of everyday ingredients, this comforting recipe is a brilliant way to make the most of seasonal leeks while creating a nourishing meal that’s perfect for lunch or a light evening supper.

Ingredients
- 2 large leeks, washed well and sliced
- 500g potatoes, peeled and diced
- 1 medium onion, chopped
- 1 tbsp olive oil
- 1 litre low-salt vegetable stock
- 100ml milk (or a dairy-free alternative)
- Salt and black pepper
- Fresh chives or parsley, chopped (optional)
To serve
- Crusty wholemeal bread
- A swirl of natural yoghurt or crème fraîche (optional)
Method
- Heat the olive oil in a large saucepan over a medium heat. Add the onion and leeks and cook gently for 8–10 minutes until softened, stirring occasionally.
- Add the diced potatoes and pour in the vegetable stock. Bring to the boil, then reduce the heat and simmer for around 20 minutes, or until the potatoes are tender.
- Remove the pan from the heat and carefully blend the soup until smooth using a hand blender, or leave a little texture if you prefer.
- Stir in the milk and season with black pepper and a little salt if needed. Warm through gently without allowing the soup to boil.
- Serve topped with chopped chives or parsley alongside warm wholemeal bread for a comforting meal.
Top Tip
Leeks often trap soil between their layers, so slice them first and rinse them thoroughly in a bowl of cold water before cooking. Any leftovers can be frozen for up to three months, making this a great recipe for batch cooking. Leek and potato soup is a classic, budget-friendly dish that’s ideal for freezing and reheating.
