Sticky Dragon Chicken Wings – A Flavour-Packed Family Favourite

Ingredients

For the chicken wings

  • 1kg chicken wings
  • 1 tbsp vegetable oil
  • Salt and black pepper

For the marinade

  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar or cider vinegar
  • 2 garlic cloves, crushed
  • 1 thumb-sized piece of fresh ginger, grated
  • 1 tsp sesame oil
  • 1 tsp chilli flakes (adjust to taste)

For the sticky glaze

  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp sweet chilli sauce
  • 1 tsp sesame oil
  • 1 spring onion, finely sliced
  • Sesame seeds to garnish (optional)

Method

  1. Place the chicken wings in a large bowl and add the soy sauce, honey, vinegar, garlic, ginger, sesame oil and chilli flakes. Mix well to ensure the wings are fully coated.
  2. Cover and leave to marinate in the fridge for at least 1 hour. For even more flavour, leave them overnight if you have time.
  3. Preheat the oven to 200°C (180°C fan). Arrange the wings on a lined baking tray and cook for 35–40 minutes, turning halfway through, until golden and cooked through.
  4. While the wings are cooking, prepare the sticky glaze by mixing the soy sauce, honey, sweet chilli sauce and sesame oil together in a small pan. Warm gently until combined and slightly thickened.
  5. Toss the cooked wings through the glaze until coated, then return them to the oven for a further 5 minutes until sticky and caramelised.
  6. Sprinkle with sliced spring onions and sesame seeds before serving.

For extra crispy wings, pat the chicken dry before adding the marinade and avoid overcrowding the baking tray. These wings also work brilliantly cooked on a barbecue during warmer months.
