Ingredients

For the fruit compote

  • 300g rhubarb, trimmed and chopped into small pieces
  • 200g strawberries, hulled and sliced
  • 50g caster sugar (adjust to taste)
  • 1 tsp vanilla extract
  • 1 tbsp water

For the fool

  • 300ml double cream
  • 150g natural yoghurt
  • 1–2 tbsp icing sugar (optional)
  • Fresh strawberries or mint leaves to decorate

Method

  1. Add the chopped rhubarb, sugar, vanilla extract and water to a saucepan. Cook gently over a medium heat for around 10–15 minutes until the rhubarb softens and becomes a thick, fruity mixture.
  2. Stir through the strawberries and cook for a further few minutes until they begin to soften while keeping some texture.
  3. Remove from the heat and allow the fruit mixture to cool completely. For the best results, chill it in the fridge before assembling the dessert.
  4. Whip the double cream until it forms soft peaks, then gently fold through the yoghurt and icing sugar.
  5. Spoon the cooled fruit mixture through the creamy mixture, creating a ripple effect rather than fully combining it.
  6. Divide between glasses or bowls and decorate with fresh strawberries or a sprig of mint before serving.

Top Tip

For a little extra crunch, serve your strawberry and rhubarb fool with homemade oat biscuits, shortbread or crushed granola. The creamy dessert also works well made a few hours ahead and kept chilled until serving.
